If a magnetic steel sheet is magnetized and demagnetized then it expands and contracts respectively. This phenomenon is known as magnetostriction. In a transformer, we provide an AC supply. So the core (made up of laminated sheets of CRGO) expands and contracts in 1 full cycle. So due to this expansion and contraction that humming sound is made.
